How versioning works: Date-plus-release-name versions (e.g. 2026-03-25.dahlia) pinned per account on first request and overridable per request with the Stripe-Version header; only the first version of each named major release (Acacia, Basil, Clover, Dahlia) contains breaking changes, monthly releases are backward-compatible.
